SOURCING
We source our cacao directly from trusted farmers and cooperatives who share our commitment to transparency, sustainability, and exceptional quality. Each origin is chosen for its distinct character and its ability to express a true sense of place.
ROASTING
We roast in small batches, adjusting time and temperature for each origin to bring out its natural depth and complexity. The result is balanced, expressive cacao that lays the foundation for every bar we create.
WINNOWING
After roasting, we carefully crack and winnow the beans to remove the husk and isolate the nibs. This step ensures a clean, pure starting point—essential for developing clarity and nuance in our chocolate.
PRE-REFINING
We begin by pre-refining our nibs into a coarse paste, preparing them for a smooth and even grind. This step sets the stage for our signature texture and consistent flavor development.
REFINING & CONCHING
We slowly refine and conch our chocolate to achieve a smooth, expressive texture while preserving the integrity of each origin. This careful process develops complexity, softens bitterness, and creates the clean, balanced finish that defines our craft.
TEMPERING
We temper our chocolate with precision to achieve a crisp snap, smooth shine, and stable structure. This final step ensures every bar breaks cleanly, melts evenly, and reflects the care behind its creation.
